Job Title: Start up Cheesemaker

Description:

  • Exhibit positive leadership at all times
  • Food Defense Policies and procedures.
  • Oversee process of cheese making from start to finish including but not limited to:
    • CIP silos, trucks, milk and whey lines, curd transfer lines on 22k vat, whey tank, and unseparated whey tank
      • HTST / Separator operation including cream control and results. 
      • Unload and Load both whey and milk trucks if needed.
      • Perform drug residue screening.
  • Adhere to and enforce State cleaning and sanitizing procedures as well as Cedar Grove Cheese Company Policies.
  • Verify and enforce accuracy of documentation / review all documents.
  • Teach, train, and coach cheesemaker assistants and makeroom empolyees all aspects of cheesemaking including SOPS, GMPs, HAACP, and OSHA regulations.
  • Provide positive feedback regarding process and product improvements, equipment repairs needed, and other concerns or ideas in order to maintain a safe working environment.
  • Achieve and advance high standards of product quality.
  • Fully accountable all cream temps and fat %.
  • Provide input on employee reviews.
  • In coordination with upper Management Approve time off requests.

Experience, Skills, and Abilities:

  • Must be a licensed Wisconsin State Cheesemaker.  
  • Must have Wisconsin Pasteurizer certificate.
  • Knowledge of GMPs, HAACP, and OSHA regulations.
  • Knowledgeable in the handling and safety of the chemicals.  
  • Must be able to bend, twist, and lift 40-55 pounds frequently thorough out the day.
  • Must understand efficiency and how to achieve it in production.

Employment Type: Full Time

Wages: Depending on experience starting minimum $24/hr.
